A Middletown baker is hoping to inspire others with her gluten-free recipes. “It’s fun to bake at home and I think you shouldn’t be afraid to do it just because it’s gluten-free,” said Elizabeth Fradin, who sells her Beth Bakes gluten-free crackers at farmer’s markets and stores throughout Southern New England.
Where you’ll often find her is in her kitchen converting regular recipes into gluten-free, substituting yogurt for sour cream, or using only half of the sugar recommended.
“What I always love hearing is ‘oh my gosh, this is gluten-free?'” she said.
Her journey in the kitchen started when her daughter was diagnosed with celiac disease as a toddler — about 20 years ago.
“The diagnosis was hard enough but then that kind of socially isolating aspect was a challenge as well,” said Fradin. So was finding anything tasty and gluten-free.
“It was awful, it was,” she recalled.
