Gluten-Free Toffee Chai Latte Sandwich Cookies

3/4 cup unsalted butter, softened

1 cup sugar

2 eggs

1 teaspoon vanilla extract

2 1/2 cups gluten-free flour blend

1 teaspoon baking powder

1/2 teaspoon salt

1/2 cup toffee baking bits

Chai Buttercream Filling (recipe follows)

In a large bowl, cream together butter and sugar. Add in eggs, one at a time. Blend in vanilla. Reserve. In a separate bowl, combine flour blend, baking powder and salt. Mix and add into wet ingredients until well incorporated. Stir in toffee bits. Once mixed, form dough into a ball. (It will be sticky.) Wrap with plastic wrap. Flatten slightly to make a disk and refrigerate for at least one hour or up to overnight.

Take dough out and thaw slightly to soften. Heat oven to 400 F. Lightly flour work surface with flour blend and roll dough out, using more flour on top if needed. Roll out to 1/8- to 1/4-inch thickness. Use cookie cutter to cut desired shape.

Place cut cookies on cookie sheets covered with parchment paper and freeze for 10 minutes. Bake for 6-8 minutes until golden brown. Cool. Fill a piping bag with Chai Buttercream Filling and pipe on top of half the cookie bases. Top with other half of cookies to make sandwiches.

Chai Buttercream Filling: In a mixing bowl fitted with a paddle attachment, cream together 1 cup unsalted butter and 4 cups powdered sugar, adding sugar in slowly. Add 1 to 2 tablespoons milk or heavy cream, 1 teaspoon cinnamon, 1/2 teaspoon ground ginger, 1/4 teaspoon ground cardamom and 1/8 teaspoon ground cloves.
